Confetti Cookies

Ingredients:

• 2-1/8 cups all-purpose flour
• 1/2 teaspoon baking soda
• 1/2 teaspoon fine salt
• 1 cup unsalted butter, softened
• 2/3 cup granulated sugar
• 3/4 cup powdered sugar
• 1 large egg
• 1 teaspoon vanilla extract
• 1/2 cup sprinkles

Instructions:

1. Preheat oven to 350 degrees. Line two baking sheets with parchment paper. Set aside.
2. In a medium bowl, sift together flour, baking soda, and salt. Set aside.
3. Add butter, granulated sugar, and powdered sugar to a mixing bowl. Using the paddle attachment, mix ingredients on medium-low speed for four minutes. Beat in the egg and vanilla extract just until combined.
4. Shape dough into balls, 1-1/2 tablespoons in size, and place on baking sheets two inches apart. Bake for 11-12 minutes until cookies just begin to brown at the edges. Allow cookies to cool on baking sheet for 5-10 minutes, then gently transfer to a wire rack to cool completely.
